These Philly Cheesesteak Sloppy Joes combine juicy ground beef, sautéed onions and bell peppers, savory sauce, and gooey melted provolone on toasted buns. They’re an easy, cheesy comfort-food dinner perfect for busy weeknights, game days, and family meals.

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion diced
  • 1 small green bell pepper diced
  • 1 small small red bell peppe diced
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • cup ketchup
  • 1 cup beef broth
  • 1 tbsp cornstarch
  • 6 slices provolone cheese
  • 6 hamburger buns or brioche buns
  • 2 tbsp butter for toasting the buns
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the diced onion, green bell pepper, and red bell pepper. Cook until the vegetables begin to soften and lightly brown.
  • Add the ground beef to the skillet. Break it apart with a wooden spoon or spatula and cook until browned and fully cooked. Drain excess grease if necessary.
  • Stir in the garlic powder, Worcestershire sauce, ketchup, salt, and black pepper. Mix well to combine the seasonings with the beef and vegetables.
  • Whisk the cornstarch into the beef broth in a small bowl until smooth. Pour the mixture into the skillet and stir well. Simmer until the sauce thickens and coats the beef.
  • Reduce the heat to low. Place the provolone slices over the beef mixture. Cover the skillet and cook briefly until the cheese melts.
  • Butter the cut sides of the buns. Toast them in a skillet until lightly golden and crisp around the edges.
  • Spoon the cheesy beef mixture generously onto the toasted buns. Serve hot with your favorite sides.

  • For the best flavor, let the onions and peppers soften and lightly caramelize before adding the beef.
  • Keep the filling thick and saucy so it stays inside the bun instead of becoming too runny.
  • Provolone gives these sandwiches the classic cheesesteak-inspired flavor, but mozzarella or American cheese can also be used.
  • Toasting the buns helps them hold up against the juicy filling.
