Chill Time 4 hours hrs
Total Time 4 hours hrs 5 minutes mins
- 1 cup rolled oats
- ½ cup pumpkin purée
- ½ cup Greek yogurt
- ¾ cup milk
- 2 tbsp pure maple syrup
- 1 tbsp chia seeds
- 1 tsp pumpkin pie spice
- ½ tsp ground cinnamon
- 1 pinch salt
- 2 tbsp chopped pecans optional
- 2 tbsp mini chocolate chips optional
Mix the pumpkin base: Add the pumpkin purée, Greek yogurt, milk, maple syrup, pumpkin pie spice, cinnamon, and salt to a mixing bowl. Whisk until smooth and well combined.
Add the oats and chia seeds: Stir the rolled oats and chia seeds into the pumpkin mixture until everything is evenly combined and the oats are fully coated.
Check the flavor and consistency; Taste the mixture and add a little more maple syrup or pumpkin pie spice if desired. The mixture should be creamy and slightly loose because it will thicken as it chills.
Refrigerate overnight: Divide the mixture between two glass jars or airtight containers. Cover and refrigerate for at least 4 hours, preferably overnight, until thick and creamy.
Add toppings and serve: Stir the oats before serving. Add chopped pecans, mini chocolate chips, extra cinnamon, or a drizzle of maple syrup. Enjoy cold or gently warm if preferred.
For the creamiest texture, prepare these pumpkin overnight oats the night before and let them chill overnight. Use plain pumpkin purée rather than pumpkin pie filling so you can control the sweetness and spices.
If the oats are too thick the next morning, stir in a small splash of milk until they reach your preferred consistency.
For extra crunch, top with toasted pecans or walnuts. For a sweeter treat, add mini chocolate chips and an extra drizzle of maple syrup.
The overnight oats can be stored in an airtight container in the refrigerator for up to 4 days.
