Total Time 20 minutes mins
- 8 ounces cremini or white button mushrooms sliced
- 3 tablespoons unsalted butter
- 2 cloves garlic minced
- 2 tablespoons all-purpose flour
- 2 cups beef or vegetable broth
- 2 tablespoons heavy cream or milk optional
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- 1 teaspoon fresh thyme or chopped parsley
Clean the mushrooms with a damp paper towel and slice them evenly. Mince the garlic.
Melt the butter in a large skillet over medium heat. Add the mushrooms and cook for 6–8 minutes, stirring occasionally, until their moisture evaporates and they turn golden brown.
Add the minced garlic and cook for about 30 seconds until fragrant.
Sprinkle the flour over the mushrooms and stir well. Cook for 1–2 minutes to remove the raw flour taste.
Gradually pour in the broth while whisking continuously to prevent lumps. Scrape the browned bits from the bottom of the skillet.
Bring the gravy to a gentle simmer and cook for 3–5 minutes, stirring frequently, until thickened.
Stir in the cream or milk, if using. Season with salt, black pepper, and fresh thyme or parsley. Adjust the consistency with extra broth if needed, then serve warm.
-
For a vegetarian version: Use vegetable broth instead of beef broth.
-
For a creamier gravy: Stir in heavy cream or milk at the end.
-
To thicken the gravy: Let it simmer for a few extra minutes, stirring frequently.
-
To thin the gravy: Add a splash of broth until you reach your preferred consistency.
-
Storage: Refrigerate in an airtight container for 3–4 days or freeze for 2–3 months for best quality.
-
Reheating: Warm gently on the stovetop, adding a little broth if needed.
