Total Time 27 minutes mins
- 6 cups day-old bread cubes French bread or white bread
- 4 tablespoons unsalted butter
- 1 medium yellow onion finely diced
- 2 stalks celery finely diced
- 2 cloves garlic minced
- 1½ cups chicken broth warmed (add gradually as needed)
- 1 tablespoon fresh parsley chopped
- 1 teaspoon dried sage
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- ¼ teaspoon salt or to taste
Optional Add-Ins:
- ½ cup cooked sausage crumbled
- ¼ cup dried cranberries
- ½ cup sautéed mushrooms
- ½ cup diced apple
Prepare the bread: Cut the bread into bite-sized cubes. If the bread is fresh, spread the cubes on a baking sheet and dry them briefly in a low-temperature oven. Let them cool before using.
Sauté the vegetables: Melt the butter in a large skillet over medium heat. Add the onion and celery and cook until softened. Stir in the garlic and cook briefly until fragrant.
Add the herbs and bread: Stir in the parsley, sage, thyme, and black pepper. Add the bread cubes and toss gently until coated with the buttery vegetables and herbs.
Pour in the broth: Gradually add the warm broth, tossing gently after each addition. Use enough to moisten the bread without leaving excess liquid in the pan.
Cover and finish cooking: Reduce the heat to low, cover, and cook for 5–8 minutes, stirring gently as needed. Once the bread is tender and heated through, taste and adjust the seasoning. Garnish with extra parsley and serve warm.
-
Bread: Day-old bread works best because it absorbs broth while holding its shape.
-
Broth: Add it gradually. You may need slightly more or less depending on how dry the bread is.
-
Vegetarian option: Use vegetable broth instead of chicken broth.
-
Flavor variations: Add cooked sausage, mushrooms, diced apple, or dried cranberries if desired.
-
Storage: Refrigerate leftovers in an airtight container for 3–4 days.
-
Freezing: Freeze in a freezer-safe container for up to 2–3 months for best quality.
-
Reheating: Add a splash of broth and reheat in a covered skillet over low heat, or use a covered oven-safe dish at 350°F (175°C). Reheat leftovers to 165°F (74°C).
-
Serving: Garnish with fresh parsley and serve warm with turkey, chicken, pork, or roasted vegetables.
