Sweet and Tangy Apricot Chicken

Juicy chicken baked in a delicious sweet and tangy apricot glaze made with apricot preserves, Dijon mustard, garlic, and soy sauce. This easy family-friendly dinner comes together with simple pantry ingredients and is perfect for busy weeknights.

Ingredients
  

  • 4 boneless skinless chicken breasts (or chicken thighs)
  • 1 cup apricot preserves
  • 2 tablespoons French dressing
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce low sodium preferred
  • 2 cloves garlic minced
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley chopped (optional, for garnish)

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  • In a mixing bowl, whisk together the apricot preserves, French dressing, Dijon mustard, soy sauce, minced garlic, paprika, and black pepper until smooth.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until lightly golden.
  • Transfer the chicken to the prepared baking dish.
  • Pour the apricot sauce evenly over the chicken, coating each piece well.
  • Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Halfway through baking, spoon some of the sauce over the chicken for extra flavour and moisture.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
  • Garnish with chopped fresh parsley and serve with rice, mashed potatoes, or roasted vegetables.

Notes

 
  • Chicken thighs can be substituted for extra juicy results.
  • Use low-sodium soy sauce if preferred.
  • For extra flavour, marinate the chicken in half of the sauce for up to 2 hours before cooking.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
  • Delicious served over steamed rice, egg noodles, or creamy mashed potatoes.
