Thai Peanut Salad – Easy and Crunchy
A fresh and colorful Thai Peanut Salad made with crisp vegetables, crunchy peanuts, and a creamy homemade peanut dressing. This easy, healthy salad is perfect for lunch, meal prep, BBQs, or as a flavorful side dish.

Salad
- 4 cups green cabbage shredded
- 2 cups red cabbage shredded
- 1 cup carrots julienned
- 1 red bell pepper thinly sliced
- 1 cucumber thinly sliced
- 3 green onions sliced
- ½ cup fresh cilantro chopped
- ½ cup roasted peanuts chopped
Peanut Dressing
- ¼ cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 1 tbsp sesame oil
- 2 cloves garlic minced
- 1 tsp fresh ginger grated
- 1 tsp sriracha adjust to taste
- 2-3 tbsp water as needed to thin the dressing
Wash and thoroughly dry all of the vegetables. Thinly shred the green and red cabbage, julienne the carrots, slice the bell pepper and cucumber, and chop the green onions and cilantro.
In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger, and sriracha. Gradually whisk in water until the dressing reaches a smooth, pourable consistency.
Place all of the prepared vegetables into a large mixing bowl. Pour the peanut dressing over the vegetables and toss until everything is evenly coated.
Sprinkle the chopped roasted peanuts and fresh cilantro over the salad. Toss lightly to combine.
Serve immediately for the freshest crunch, or chill for 15–20 minutes before serving. Garnish with extra cilantro, peanuts, and lime wedges if desired
- For maximum crunch, toss the salad with the dressing just before serving.
- Add grilled chicken, shrimp, tofu, or edamame for extra protein.
- Store the dressing separately if making ahead for meal prep.
- Adjust the amount of sriracha depending on your preferred spice level.
