Ingredients
  

  • ½ cup unsalted butter softened
  • ½ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips
  • ½ cup chocolate chunks
  • 1 cup mini marshmallows
  • ¼ cup graham cracker pieces
  • ¼ cup chocolate pieces
  • A pinch of flaky sea salt optional

Instructions
 

  • Prepare the Cookie Dough: Beat the softened butter, brown sugar, and granulated sugar until creamy and fluffy. Add the egg and vanilla extract and mix until well combined.
  • Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  • Add the S’mores Ingredients: Gradually mix the dry ingredients into the wet mixture until just combined. Gently fold in the graham cracker crumbs, chocolate chips, and chocolate chunks.
  • Shape the Cookies: Scoop the dough into evenly sized balls and place them on parchment-lined baking sheets, leaving space between each cookie.
  • Bake the Cookies: Bake until the edges are set and the centers still look slightly soft. Avoid overbaking so the cookies stay chewy and fudgy in the center.
  • Add the Marshmallows and Chocolate: Near the end of baking, carefully top each cookie with mini marshmallows, graham cracker pieces, and extra chocolate. Return to the oven briefly until the marshmallows are soft and lightly toasted.
  • Cool and Serve: Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack. Sprinkle with flaky sea salt if desired and serve warm or at room temperature.

  • For the best texture, avoid overbaking these cookies. The centers should look slightly soft when they come out of the oven because they will continue to set as they cool.
  • For extra-gooey cookies, add the marshmallows and extra chocolate near the end of baking rather than at the beginning.
