This is the kind of dish I find myself making on repeat — for weekend potlucks, packed lunches, or a quick weeknight side. Instead of the usual canned green beans you’d find in a classic three bean salad, I use a more satisfying trio: kidney beans, cannellini beans, and chickpeas. They hold their shape, pack in the protein, and soak up dressing like a dream.

Everything gets tossed with crisp English cucumber (thinner skin, fewer seeds — worth it), colorful bell peppers, capers, and a generous handful of fresh herbs. The dressing is a simple garlic Dijon vinaigrette with just a hint of sweetness to balance the tang. Fresh, filling, and genuinely hard to stop eating.

  • Red onion: Adds a sharp, slightly sweet contrast to the earthy beans
  • Capers: Optional, but their salty, briny punch really elevates the whole salad
  • Fresh herbs: Parsley, mint, and basil — don’t skip these; they make it feel alive

For the Garlic Dijon Vinaigrette

  • Garlic: Beans absorb bold flavors well, and garlic is at the top of the list
  • Dijon mustard: Adds a peppery depth and keeps the dressing nicely emulsified
  • Fresh lemon juice: Brightens everything and wakes up the other flavors
  • Sugar: Just a touch to soften the lemon’s edge. Honey works too, though it makes the recipe non-vegan
  • Extra virgin olive oil: Use something with a bold, peppery flavor — a good Greek or Spanish variety works beautifully here
  • Salt and black pepper: Essential for pulling all the flavors together

How to Make Three-Bean Salad

Grab a cutting board and a large bowl — that’s really all you need. Ten minutes of chopping, a few minutes of mixing, and you’re set. You can eat it straight away or let it rest for 30 minutes to let the flavors develop. Either way, it’s good.

Step 1 — Make the vinaigrette. In a large serving bowl, whisk together 2 minced garlic cloves, ½ tablespoon Dijon mustard, 2 tablespoons fresh lemon juice, 1 teaspoon sugar, ¼ cup extra virgin olive oil, and a generous pinch of salt and black pepper.

Step 2 — Add the beans. Drain and rinse one 15-ounce can each of kidney beans, cannellini beans, and chickpeas. Add them directly to the bowl with the dressing.

Step 3 — Add the vegetables. Toss in 1 chopped green bell pepper, 1 chopped red bell pepper, ½ chopped English cucumber, 1 cup finely chopped red onion, 1½ tablespoons drained capers, 1 cup chopped fresh parsley, and 10–15 torn leaves each of fresh mint and basil. Toss everything together until well coated.

Step 4 — Chill (optional but recommended). Cover and refrigerate for at least 30 minutes before serving. Give it a quick toss before plating.

Tips for the Best Bean Salad 

  • Rinse the beans well. The starchy liquid in the can makes the salad cloudy and causes things to clump together. A good rinse fixes both.
  • Give it time to marinate. Beans are absorbent by nature — they need a little time to soak up the dressing. Thirty minutes minimum, a few hours if you can manage it.
  • Make it your own. Swap bell peppers for cherry tomatoes, try different herb combinations, throw in some olives, or use whatever beans you have on hand. This recipe is very forgiving.

Which Beans Are Best for Three Bean Salad?

Traditional American three bean salads usually include green beans, kidney beans, and chickpeas. I leave out the canned green beans — they go mushy and don’t add much. Here’s what I use instead:

  • Cannellini beans: Creamy and mildly nutty — a great base
  • Chickpeas: Firmer than most beans, which gives the salad texture. Dried and cooked from scratch gives you more control, but canned is perfectly fine
  • Kidney beans: Add color, earthiness, and substance

If you want to mix things up, black-eyed peas, pinto beans, or steamed wax beans all work well here too.

Ingredients

For the Salad

  • 1 15-oz can kidney beans Drained and rinsed
  • 1 15-oz can cannellini beans Drained and rinsed
  • 1 15-oz can chickpeas Drained and rinsed
  • 1 whole green bell pepper cored and chopped
  • 1 whole red bell pepper cored and chopped
  • ½ whole English cucumber chopped
  • 1 cup red onion finely chopped
  • 1½ tbsp capers drained
  • 1 cup fresh parsley chopped
  • 10–15 leaves fresh mint torn or gently chopped
  • 10–15 leaves fresh basil torn or gently chopped

For the Garlic Dijon Vinaigrette

  • 2 cloves garlic minced
  • ½ tbsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 1 tsp sugar or honey — note: honey makes it non-vegan
  • ¼ cup extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  • Make the vinaigrette. In a large serving bowl, whisk together the minced garlic, Dijon mustard, lemon juice, sugar, olive oil, salt, and black pepper until well combined.
  • Add the beans. Drain and rinse the kidney beans, cannellini beans, and chickpeas, then add them to the bowl with the vinaigrette.
  • Add the vegetables. Add the chopped green and red bell peppers, cucumber, red onion, capers, parsley, mint, and basil. Toss everything together until evenly coated in the dressing.
  • Chill and serve. For best flavor, cover and refrigerate for at least 30 minutes before serving. Toss once more before plating.

Notes

 
  • Rinse beans well to remove excess starch and prevent the salad from becoming cloudy or sticky.
  • This salad gets better as it sits — make it a few hours ahead for deeper flavor. If prepping a day in advance, add the fresh herbs within 30 minutes of serving to keep them bright.
  • Swap bell peppers for cherry tomatoes, mix in olives, or try different beans like pinto or black-eyed peas to make it your own.
  • Keeps well in an airtight container in the refrigerator for up to 4 days.
