  • 2 tbsp pure maple syrup not pancake syrup
  • 1 pinch sea salt

Salad

  • 5 cups baby arugula
  • 2 medium apples Fuji, Gala, or Honeycrisp; thinly sliced
  • ¼ medium red onion sliced paper thin
  • ½ cup dried figs stemmed and halved
  • cup goat cheese crumbles

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar good quality
  • 1 tbsp pure maple syrup honey works as a substitute
  • 1 tbsp fresh lemon juice freshly squeezed preferred
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • ¼ tsp sea salt adjust to taste
  • ¼ tsp black pepper adjust to taste
