Chop all fresh ingredients — Dice the tomatoes, avocados, bell pepper, and onion. Mince the jalapeños and garlic. Chop the cilantro. If using fresh corn, cut it off the cob.
Rinse and drain the black beans, black-eyed peas, and canned corn (if using). Shake off any excess liquid.
Combine everything in a large bowl — add all chopped vegetables, beans, and corn together.
Add the dressing — Pour in the Italian dressing and fresh lime juice. Season with salt and toss everything together until evenly coated.
Taste and adjust — Add more salt, lime juice, or dressing to your liking.
Serve immediately with tortilla chips or Scoops, or refrigerate for a few hours to let the flavors develop even more.
