Cowboy Caviar Recipe

Ingredients
  

  • 6 Roma tomatoes diced
  • 1 bell pepper any color, seeded and diced
  • 1 medium onion finely diced
  • 2 jalapeño peppers seeded and finely diced
  • 1 large avocado peeled, pitted and diced
  • 15 oz can corn drained (or from 1 cooked cob of corn)
  • 15 oz can black beans well rinsed and drained (or make your own)
  • ½ bunch of cilantro About 1/2 cup chopped
  • 3-4 Tbsp lime juice
  • ½ cup light Italian Dressing *
  • 4 large medium garlic clove pressed
  • 1 tsp sea salt or to taste

Instructions
 

  • Chop all fresh ingredients — Dice the tomatoes, avocados, bell pepper, and onion. Mince the jalapeños and garlic. Chop the cilantro. If using fresh corn, cut it off the cob.
  • Rinse and drain the black beans, black-eyed peas, and canned corn (if using). Shake off any excess liquid.
  • Combine everything in a large bowl — add all chopped vegetables, beans, and corn together.
  • Add the dressing — Pour in the Italian dressing and fresh lime juice. Season with salt and toss everything together until evenly coated.
  • Taste and adjust — Add more salt, lime juice, or dressing to your liking.
  • Serve immediately with tortilla chips or Scoops, or refrigerate for a few hours to let the flavors develop even more.

Notes

 
  • Make it ahead — This dip tastes even better after sitting in the fridge for a couple of hours. Perfect for prepping the morning of a party.
  • Avocado tip — Add avocado just before serving if making ahead to prevent browning.
  • Storage — Keep leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving.
  • Heat level — Remove jalapeño seeds for a milder version, or leave them in for extra kick.
  • Swap it — Don't have black-eyed peas? All black beans work perfectly. Use what you have.
