Cowboy Caviar

Looking to bring something a little unexpected to your next backyard gathering? This is it. Scoop it up with crunchy tortilla chips or classic Scoops corn chips and watch it vanish from the bowl before you’ve even sat down.

Every family seems to have their own spin on cowboy caviar, and after trying plenty of versions over the years, this one has earned a permanent spot in our rotation. It’s just that good.

Ingredients:

What makes this salsa so special is how vibrant and satisfying every single bite is. Summer is the sweet spot — garden-fresh veggies take it to another level — but honestly, it holds up beautifully with grocery store staples any time of year.

  • Tomatoes – Nothing beats a ripe, in-season tomato, but don’t let winter stop you. This salsa works year-round.
  • Beans – Black beans or black-eyed peas both shine here. We swap between the two depending on what’s in the pantry — either way, rinse and drain them well.
  • Corn – Fresh corn cut straight from the cob in summer, canned or frozen when it’s cold outside. Both work wonderfully.
  • Avocado – Brings a rich, buttery texture to the whole thing. Fair warning: you may find yourself adding more than the recipe calls for.
  • Bell Pepper – Red, orange, yellow, or green — grab whatever you have. The color just makes the bowl look even more inviting.
  • Onion – Gives every bite a little sharpness and satisfying crunch.
  • Jalapeños – Don’t let these scare you off. The dressing softens the heat considerably, and even little ones tend to go back for seconds.
  • Italian Salad Dressing – The secret weapon. It works its way into every ingredient and brings the whole dish together. Newman’s Own is a go-to, but your favorite brand works just fine — or try a homemade version.
  • Limes, garlic, and salt – Always fresh. Always worth it.
  • Cilantro – Non-negotiable. It wouldn’t be salsa without it.

How to Make Cowboy Caviar

Step 1: Chop the fresh ingredients — tomatoes, avocado, onion, jalapeños, bell pepper, cilantro, and fresh corn if you’re using it. Mince the garlic and add everything into a large mixing bowl.

Step 2: Rinse and drain the black beans (and canned corn if that’s what you’re working with), then add them to the bowl.

Step 3: Bring it all together — pour in the Italian dressing and fresh lime juice, season with salt, give it a good stir, and you’re done.

That’s genuinely all there is to it. You can prep this a few hours ahead of time and let the flavors meld — it only gets better. Leftovers the next day? Still fantastic.

How to store

In the refrigerator — Transfer any leftovers to an airtight container and refrigerate for up to 3 days. The flavors actually deepen overnight, so day-two servings are arguably even better than day one.

Make-ahead tip — This is a perfect dish to prep the morning of a party or cookout. A few hours in the fridge gives all those flavors time to get to know each other, and you’ll have one less thing to worry about when guests arrive.

Cowboy Caviar Recipe

Prep Time30 minutes mins
Total Time30 minutes mins
Servings: 10

Ingredients

  • 6 Roma tomatoes diced
  • 1 bell pepper any color, seeded and diced
  • 1 medium onion finely diced
  • 2 jalapeño peppers seeded and finely diced
  • 1 large avocado peeled, pitted and diced
  • 15 oz can corn drained (or from 1 cooked cob of corn)
  • 15 oz can black beans well rinsed and drained (or make your own)
  • ½ bunch of cilantro About 1/2 cup chopped
  • 3-4 Tbsp lime juice
  • ½ cup light Italian Dressing *
  • 4 large medium garlic clove pressed
  • 1 tsp sea salt or to taste

Instructions

  • Chop all fresh ingredients — Dice the tomatoes, avocados, bell pepper, and onion. Mince the jalapeños and garlic. Chop the cilantro. If using fresh corn, cut it off the cob.
  • Rinse and drain the black beans, black-eyed peas, and canned corn (if using). Shake off any excess liquid.
  • Combine everything in a large bowl — add all chopped vegetables, beans, and corn together.
  • Add the dressing — Pour in the Italian dressing and fresh lime juice. Season with salt and toss everything together until evenly coated.
  • Taste and adjust — Add more salt, lime juice, or dressing to your liking.
  • Serve immediately with tortilla chips or Scoops, or refrigerate for a few hours to let the flavors develop even more.

Notes

  • Make it ahead — This dip tastes even better after sitting in the fridge for a couple of hours. Perfect for prepping the morning of a party.
  • Avocado tip — Add avocado just before serving if making ahead to prevent browning.
  • Storage — Keep leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving.
  • Heat level — Remove jalapeño seeds for a milder version, or leave them in for extra kick.
  • Swap it — Don’t have black-eyed peas? All black beans work perfectly. Use what you have.
